TOFU CURRY

Ingredients

650g Tofu firm diced
300g KWERKY powder
200g White Onion, peeled, cored, sliced
15g Garlic puree
15g Ginger puree
50ml Vegetable Oil
7g Cumin ground
7g Turmeric ground
7g Coriander ground

8g Paprika ground

50g Tomato puree

400g Chopped tomato tin

200ml Water

20g Coriander

8g Salt

½g Black pepper cracked

Method:

Take diced tofu and place in a bowl.

Add half the KWERKY milk(300g powder mixed with 200ml water), garlic puree, ginger puree, cumin, paprika, turmeric, coriander ground, and 1/2 of the oil and mix.

Place marinated tofu in the fridge over-night.

The next day take the marinade out and keep it to one side.

In a pan heat the other 1/2 of the oil, lightly shallow fry the tofu on all sides until slightly golden brown. Remove from the pan in a bowl.

In the same pan add the rest of the oil and sliced onions and fry for 5min till golden brown.

Add the tofu, chopped tomato, tomato puree, chopped coriander stalks and water (if required).

Simmer for 10min till everything is cooked.

Add the other half of the KWERKY milk and simmer for 10min.

Season and mix with coriander leaf. Serve in a serving dish.
